How we work

Flavour lives in the ferment.
The rest is your decision.

Cape & Strait is built around a simple idea. We take a grain feedstock, ferment and distil it into a clean new-make spirit, something close to a young unaged whisky, with a quiet cereal warmth you can smell before you can name it. Then we redistil that base with a real botanical that means something to us: an ingredient with genuine cultural roots, chosen because it works in a cocktail. The result is a spirit that tastes like somewhere. We're starting with pandan. There's more to come.

Grain and fermentation
We start with a grain feedstock, ferment it to develop character, then distil into a clean new-make spirit with real cereal warmth.
Botanical redistillation
We redistil the base with a real botanical, chosen because it has genuine cultural roots and performs in a cocktail.
Cocktail first
Every expression is developed against real specs. If it doesn't perform in a glass, it doesn't leave the distillery.

Each expression will have a genuine flavour argument, real cultural roots, and something to say in a cocktail. We follow the history, not the trend.

First expression

No. 01
Pandan

Cape & Strait · New-Make Spirit · 40% ABV · United Kingdom

Pilot 2026

A double-distilled malted barley new-make spirit redistilled with pandan leaf. The base has structure without being loud about it. A quiet cereal warmth that holds up in a cocktail rather than disappearing into one.

Pandan is one of the most widely used flavourings in Southeast Asian cooking. Vanilla-ish, a bit green, slightly herbaceous. Most people can't place it on first encounter, which tends to make them want another sip. It also turns out to be a natural fit with espresso, something we discovered early and have been building around ever since.

The grassy, vanilla warmth of the pandan settles into the malty, bready base and the result evokes kaya toast or a freshly baked pandan cake. We had always loved an espresso martini, and were especially fond of twists that brought a new dimension to them. Which made us think: pandan could be the perfect complement.

Nose
Vanilla, green leaf, light toasted grain
Palate
Clean entry, herbaceous mid, soft warmth
Finish
Long and aromatic, no harshness
In short
Structured. Built to mix.

The Pandan Espresso Martini

  • Cape & Strait No. 01 Pandan40 ml / 1.35 oz
  • Fresh espresso20 ml / 0.67 oz
  • Coffee liqueur10 ml / 0.33 oz
  • Sugar syrup5 ml / 0.17 oz
  • Shake hard. Double strain.—

Pandan and espresso share a roasted, slightly floral depth that most people can't quite name. Together they make a richer, more layered drink. Not just different from the vodka version, but we think better than it.

For bartenders

We want partners,
not just stockists.

We have a sample of our pilot liquid and we'd love you to taste it. No pitch, no pressure. Just an honest conversation about whether this is something worth putting on your menu.

We want to work with bartenders who'll tell us honestly when something isn't working. In return: full transparency on the process, a real say in how the expression develops, and first access when the bottles are ready.

We're not going retail, and we're not trying to grow too big too quickly. We want to partner with a handful of the right bars, people who'll use it well and tell us honestly when something isn't working.

  • →Sample of our pilot liquid available now
  • →Full transparency on ingredients and production
  • →Cocktail spec development, together
  • →No minimum order for founding bar partners at launch

I grew up in Singapore, a country where food and drink are taken seriously, from $5 chicken rice, to $25 craft cocktails, to mum's cooking at home. Being surrounded by this culinary culture, flavour has always come naturally to me.

My thesis during my biochemical engineering degree was in fermentation and bioreactor optimisation, which meant plenty of time running trials in a local brewery and visiting whisky distilleries in Scotland! After that, I spent several years in the energy space before Oxford and moving into consulting. On the side, I've been running a cocktail instagram for the past 4 years.

Cape & Strait came from combining that engineering background with a genuine passion for mixology, and a fair amount of nostalgia for home.

I grew up in Johannesburg, in a culture and a home where hospitality was simply the norm. That instinct has followed me everywhere since.

I've had a long career in FMCG and F&B strategy consulting before Oxford. This has allowed me to build a knack for knowing whether an idea is commercially robust or just a pub dream!

My Johannesburg upbringing and Indian heritage connected directly to the same story that shaped Iresh's upbringing and Singapore's food culture. That's what makes Cape & Strait's story feel like ours to tell.
